Homemade Granola and Fresh Fruit Honey Parfait

Granola (Only use 1/2 C of this recipe in the parfait, save the rest for snacks!)
- 2 Cups Oats (rolled or instant - I used instant gluten free)
- 3/4 C Almonds (or nut of choice)
- 2 Tbsp Pepitas (or seed of choice)
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 C Maple Syrup
- 1/4 C Coconut Oil
- 1 tsp Vanilla Extract

- 1/2 C Granola (above)
- 6 oz 0% Plain Greek Yogurt
- 1 1/2 C Fresh Fruit (I used strawberries, apple, and blueberries)
- Drizzle of Honey
- 1/2 scoop Protein Powder (Optional! For a bigger kick of protein if you're on a high-protein diet)


Make Granola First:

  1. Pre-heat oven to 350 degrees f. Line baking sheet with parchment paper.

  2. In a bowl, mix oats, nuts, seeds, salt and cinnamon

  3. Add in oil, maple syrup, and vanilla

  4. Spread on sheet and bake for about 20 min, mixing 1/2 way through

  5. Let cool for several minutes (while assembling the rest of the parfait)

Now make the parfait!

  1. While granola is cooking, wash and slice all your fruit

  2. In a small bowl, scoop yogurt (optional: mix in protein powder)

  3. Line with all the fresh fruit you've got

  4. Top with about 1/2 C of the granola

  5. Drizzle with honey and enjoy!
